FOODIE FRIDAY - TODDLER FRIENDLY COOKIE RECIPE

How do we feel about a regular "Foodie Friday" feature?!
I'm not talking weekly… or maybe if I got my life together it could be… but just a little regular food related post. Perhaps a recipe, a review or something… I'm thinking out loud here.
Lets give it a whirl, and kick it off this week with a little recipe of my own. This one is so quick and easy that me and Frank made them this morning - at 7.30am before work! They are sugar free (I have used honey and lemon to sweeten) and still taste so good that even I love them (I *may* have sampled one or two with my morning cuppa whilst sat doing my accreditations for work)
I've used American style measurements as I find them a lot quicker to use - and easier to keep track of when you’re just making things up as you go along!!
Ingredients -
1.5 cup oats
1/2 cup desiccated coconut
1.5tsp baking powder
4 tbsp plain flour
40g butter, melted
1 egg
3 tbsp honey
Juice and zest of 1 lemon
Couple of handfuls of raisins/ sultanas
Method -
Line a couple of baking trays with greaseproof paper
Preheat the oven to 180 (fan)
Mix all dry ingredients in a large bowl (apart from dried fruit)
In a separate bowl, whisk together the wet ingredients
Add the wet ingredients into the dry and mix well.
Once combined (f your mixture is a little wet you can add extra oats/ coconut/ flour to thicken as needed) stir through the raisins
Using about a tablespoon of your mix, roll into a ball then press gently onto your baking tray to flatten
Bake for 10 - 12 mins
Leave to cool
Devour
